Precious Black Truffle

Among the ancient oak and chestnut forests surrounding Acquasanta Terme grows one of the territory’s most valuable products: the precious black truffle (Tuber melanosporum Vitt.). This hypogeous fungus finds an ideal habitat in the Tronto and Garrafo valleys, thanks to the calcareous soils, temperate mountain climate, and perfect symbiosis with the roots of local trees.

Harvested by generations of expert truffle hunters, the black truffle of Acquasanta is known for its intense and persistent aroma, with notes of hazelnut and undergrowth, and for its violet-black flesh veined with white. The tradition of truffle hunting, passed down from father to son, is an ancient ritual that unites man, trained dog, and nature in an indissoluble bond.

The artisanal processes take place directly in the territory: preserves, sauces, aromatic oils, butters, and gastronomic preparations that allow the enjoyment of truffles all year round, without losing their authentic fragrance. Many local companies stand out for the quality of their processes and their attention to the short supply chain, enhancing a product that represents a symbol of mountain excellence.
