Here, among the sixteenth-century houses of a "villa" in Acquasanta Terme, Ernesto—perhaps the last true miller—continues to preserve an ancient knowledge: transforming grain into flour with the sole power of water. Visiting the mill is a journey back in time. You can enter the adjoining house, which remains as it was in 1914, and imagine the life of the farmers who worked with hands and heart. It is a place that moves both adults and children: an open-air classroom where history, science, and nature intertwine. Children discover how wholemeal flour is made, watch the wheel turn, and understand that clean energy is an idea as old as the mountain. Around the mill, comfortable panoramic mule tracks start, immersed in lush vegetation, perfect for a leisurely walk or a hike along the Paggese–Piedicava route. Ernesto opens the mill on weekends, by appointment, and welcomes anyone who wants to discover this small miracle of memory and tenacity.
